Chelcie’s Blueberry Collagen Pancakes

Chelcie’s Blueberry Collagen Pancakes

There’s something about a slow morning that just feels different the kind where you’re not rushing out the door, your coffee is still warm, and you actually have time to make something nourishing. But let’s be honest… most “cozy” breakfasts don’t leave you feeling your best. They spike your blood sugar, leave you hungry an hour later, and don’t really support your body in a meaningful way. These Blueberry Collagen Pancakes are everything you want in a comforting breakfast, but with intention behind every ingredient. They’re soft, naturally sweet, and balanced with protein, fiber, and healthy fats to keep your energy steady and your body supported. Because breakfast shouldn’t just taste good, it should work for you. This is the kind of recipe that helps you feel grounded, nourished, and set up for the day ahead!

Ingredients

  • 1 ripe banana (natural sweetness + potassium to support energy, muscles, and nervous system balance)
  • 2 eggs (high-quality protein + essential fats that support hormone health and satiety)
  • ½ cup gluten-free oats (blended into flour) (fiber-rich to support digestion, gut health, and steady blood sugar)
  • 1 scoop Sera & Mattina Hydrolyzed Collagen Peptides (supports skin elasticity, hair strength, joint health + adds easy, 10g of protein)
  • ½ tsp baking powder (creates that soft, fluffy texture)
  • Pinch cinnamon (supports blood sugar balance + adds warmth and depth)
  • Pinch sea salt (enhances flavor + supports mineral balance and hydration)
  • Splash of unsweetened almond milk (keeps the batter smooth and light while staying dairy-free)
  • ½ cup fresh or frozen blueberries (rich in antioxidants to support skin, reduce inflammation, and protect overall health)
  • Optional: drizzle of maple syrup (a natural sweetener that feels indulgent without relying on refined sugar)

Directions

1. Start with the base
In a medium bowl, mash the banana until completely smooth.

2. Build your protein foundation
Add in the eggs and whisk until fully combined.

3. Add your dry ingredients
Stir in the blended oat flour, collagen peptides, baking powder, cinnamon, and sea salt. Mix until a thick batter begins to form.

4. Adjust the texture
Add a splash of almond milk and stir until the batter is smooth and pourable but still thick enough to hold its shape on the pan.

5. Fold in the blueberries
Gently fold in the blueberries so they stay whole and create those soft, juicy pockets in every bite.

6. Cook low and slow
Heat a non-stick pan over medium-low heat and lightly grease it. Pour small rounds of batter and let them cook for 2–3 minutes, until bubbles form on the surface.

7. Flip + finish
Flip carefully and cook for another 1–2 minutes until golden and cooked through. Serve with your favorite toppings.

There’s a difference between eating something just to get through the morning and eating something that actually supports your body. When you start your day with something balanced like this, you feel it. Your energy is more stable, your mood feels more even, and you’re not dealing with that mid-morning drop that makes everything feel harder than it needs to be. It’s not a drastic change; it’s just a better foundation. And that foundation carries into everything else.

Enjoy!
